5 credits This course teaches the fundamentals of baking for persons with dietary needs. Students will explore a variety of diets with a focus on gluten free, lactose free, sugar free, vegan/vegetarian, and religious diets. Prerequisites: BAKE 109 , BAKE 111 , and BAKE 112 , or instructor permission Corequisites: BAKE 119 Course
