CUA 2051 - Advanced Garde Manger: Hors D’Oeuvres CUA 2051 - Advanced Garde Manger: Hors D’Oeuvres 1.0 Credits This course introduces the student to a broad array of both hot and cold hors d’oeuvres and appetizers. Students learn to prepare various ethnic hors d’oeuvres including tapas, antipasta, sushi, classical and contemporary canapes, as well as show mirrors and platters.
