CULA 2180 - GardeManger CULA 2180 - GardeManger Lecture: 2 Lab: 3 The student will demonstrate preparation and presentation of cold foods, ice carvings, classical preparations of specialty foods, and buffet preparation. Students will become familiar with and be able to prepare nutritional cold foods, hot hors d’oeuvres, sausages, and truffles, as well as demonstrate correct carving of fruits and vegetables.
