MP 240 — SPECIALTY MEATS CREDITS:

This course is geared towards processing specialty meats, value added products, and variety meats such as sausages, jerky, pre-pressed patties and wild game. Specialty products are a growing demand in the meat processing industry, and this course aims to educate students on how to add value to products to increase income potential and create lasting products for consumers.
