This is an undergraduate level course offering detailed insights into skeletal muscle morphological, physiological, cellular, and molecular factors affecting muscle structure and function, with special emphasis on cellular and molecular regulation of muscle growth and development, such as myo-, fibro-, and adipo-genesis. And the relationship between the properties of skeletal muscle and meat quality. ANSC 30303 and(or) CHEM 38103 are recommended as a prerequisite(s).
