CULA2342 — European Cakes & Torts

This course will introduce a wide variety of classical and modern cakes suitable for restaurants, retail shops, and large-scale production. Advanced techniques of mixing, filling, glazing, and icing are emphasized. The preparation of cakes/tortes specific to continental Europe, including Dobos, Sacher tortes, and Black Forest cake will be described in detail. Corequisite(s): CULA 1321
