CUL1703 — Advanced Food Production

A laboratory course in which students are taught how to produce the Mother Sauces, demi-sauces, soups, stocks, and introduced to chicken fabrication and preparation. Students are taught the proper composition of a plate. Students will be required to participate in catering and dining activities.
