FDST 1613 - Food Entrepreneurship FDST 1613 - Food Entrepreneurship Description This business-focused course provides the food entrepreneur with knowledge necessary to bring a food idea or product to market. It is also designed for those interested in starting a food-related business, working for a food entrepreneurial company, or assisting others in implementing innovative food businesses. We begin with a broad overview of entrepreneurship, analyze case studies from successful businesses, and review funding sources for launching a business. We further review business, organizational, and product development, as well as food purchasing, food safety, packaging, production and distribution. In addition to lecture classes, the course includes kitchen time for product development, and a session at UA Food Innovation Center and UA Sensory Lab for evaluation and tasting.
