This course is a study of the science of human nutrition for students entering the health professions. Nutrition research, professional and government nutrient standards, and tools to plan a healthy diet are introduced. The focus of study is on the essential macro and micronutrients, metabolism of the energy yielding nutrients, and energy and weight balance. The principles of nutrition and nutrient requirements are applied to health and wellness as well as prevention and intervention in chronic disease. Each student will perform a personal computerized diet analysis and draw valid conclusions to modify their diet in a scientific paper.
